Preparation:
Wash the white beans and soak them in plenty of water (about 3-4 times the amount of beans) for about 12 hours. Cook the soaked beans in the soaking water to preserve the vitamins and minerals. Cooking time is about 45 minutes. Hard water may take longer.
Recipe suggestion:
Bean salad (recipe for 4 people)
Ingredients: 250g beans, one red and one yellow bell pepper, half a green cucumber, 2 tomatoes, 1 apple, 2 tablespoons oil, 2 tablespoons vinegar, pepper, salt, and Provençal herbs.
Preparation: Cook the beans according to the instructions and let them cool. Clean the vegetables and fruit, dice them, and mix them with the white beans. Make a dressing from the vinegar, oil, and spices and serve it on the salad.
Our tip: Add salt and a little vinegar or lemon juice towards the end of the cooking time.
